These don’t require any special ingredients except the mustard oil which is a love it or leave it ingredient. I’d just use olive oil if I did’t have/want to get the mustard oil. I roast the eggplant directly on the gas burner. Goes well with with warmed pita. Leave out the chillies if you don’t like the heat.

These are regional, rustic dishes which made use of the dying embers of a fire to roast the vegetables. The best kind of Indian food that you will not get at any restaurant.

This would go very well with a chutney made of cilantro, mint leaves, a bit of onion, couple of cloves of garlic, lemon juice and salt with some chillies for heat (optional). Blend with as little water as possible. This chutney freezes well too.

I tried to copy these recipes from the site, but it didn’t work for some reason. Which is just as well, because the step-by-step recipes are very useful. These sound wonderful–and different.
